Melt-In-Your-Mouth Pumpkin Cookies by Mack Fuller

I made Melt-In-Your-Mouth Pumpkin Cookies. They are kind of muffin-like and are a softer cookie. I found my recipe through Google, which led me to http://www.bhg.com/thanksgiving/recipes/pumpkin-recipes/#page=18. It was a very helpful source with many different recipes.

Our cookies were actually very good. I didn't think they were going to taste the greatest because of the smell of the dough. They ended up tasting a lot like pumpkin which I liked and you also could taste a little bit of the other things like cinnamon and nutmeg, but they didn't over power the pumpkin.

One thing I disliked about the cookie was that it was more like a muffin texture wise. The taste was kind of like a muffin, but it felt more like a cookie when you ate it. I really liked the taste of it though.

A few other things I would serve with these cookies are white milk, coffee or tea. I wouldn't really want to put any other foods with it since it is more of a dessert-snack type of food.

One of the changes I would make would be to make it healthier. We put four sticks of butter in the recipe because that is what it called for. Next time I make these I will cut the recipe down to not make as many and maybe use less butter. They might not taste as good though.
